Recommendations for sustainable catering

Everyone can take part in the reduction of food waste and get involved in supporting local growers, producers and food service providers. Here are a few recommendations on what you can do:

  • Start a Bring Your Own Container (BYOC) culture at your events.  This will encourage guests to take home a surplus of food instead of throwing it out.
  • For a more inclusive and waste-conscious approach at events, offer buffet style dining  instead of plated meals. Buffet-style dining  options should feature labels to create awareness for ingredients,  allergies and food preferences.
  • For environmental sustainability, feature menus items that are vegetarian, and vegan.

Keywords

Social Enterprise –  purpose-driven businesses that sell goods or services to generate profit, while addressing social, cultural, or environmental problems with their business.

Community Economic Development – is a community driven model centred in building sustainable and grassroots opportunities for entrepreneurship, employment and economic growth.

Value-Driven Supply Chain (VDSC) – when sourcing ingredients for a meal, caterers will need to purchase a specific quantity of goods (food) to feed the guests. The manner in which these goods are sourced is what differentiates value driven supply chains from traditional supply chain models. VDSC adds value to every purchase by partnering with local suppliers/vendors.
